Mashed Potatoes Balls
with Sweet Corn, Cheddar Cheese & Scallion

15 Balls
Ingredients:

1 cup leftover mashed potatoes
1 egg substitute
1/4 cup sweet corn nibbles
1/4 cup cheddar cheese
1/4 cup scallion
1/2 cup flour
1 tsp baking powder
1/2 tsp of salt
1/4 tsp pepper
1/4 cup of butter to use total

Instructions:

Add mashed potatoes, sweet corn, cheese, egg substitute, flour to a large bowl. Stir to combine. Note that you should not need to add salt and pepper if your mashed potatoes are seasoned well. If they are bland, season the mixture with salt and pepper to taste. Any additional seasoning is also good to go with.

I have this iron pan that I could refer to a dutch pan cake pan and that's where i cooked this balls, if you do not have a pan like that then it would ideal to do this as a patty/ fritter on a regular pan.

Heat butter either in the dutch pan or in a large skillet over medium high heat. Once hot, scoop spoon size into the pan or form patties and add them in batches, making sure not to overcrowd the pan as you work. Cook the patties for 3 to 5 minutes on each side, until golden brown.

Remove to a plate lined with paper towels to absorb the oil

Sprinkle them with Scallion and enjoy them with Baba ghanoush
